Pilsner Urquell Clone Recipe

This Pilsner Urquell extract clone recipe is a crisp, golden-hued lager that closely mimics the classic Bohemian profile. It features a soft, malty sweetness balanced by the distinct earthy and spicy aroma of Saaz hops.

Brewing Instructions

1

Heat 2.5 gallons of water to 155°F and steep the crushed Carapils grain in a muslin bag for 30 minutes. Do not let the water exceed 170°F. Remove grain bag and discard.

2

Turn off heat and stir in the 7 lbs of Pilsen Light DME until fully dissolved.
3

Return to a boil and add the 2 oz of Saaz hops for the 60-minute addition.
4

At 30 minutes remaining, add the 1 oz Saaz flavor addition.
5

Add clarifier (Irish moss or whirlfloc tablet) with 15 minutes remaining.

6

At flameout, stir in the final 1 oz of Saaz hops and allow to rest for 5 minutes.
7

Cool the wort rapidly to 75°F and transfer to a sanitized fermenter.
8

Top up with cold, filtered water to reach 5.5 gallons and aerate thoroughly.
9

Pitch yeast at 50°F and move to fermentation chamber
Notes

Temperature: 50-52°F

Duration: 3 weeks primary, 4 weeks lagering at 35°F.  Perform a diacetyl rest by raising temp to 68°F for the final 3 days of primary fermentation before lagering. Slow, cold fermentation is crucial for a clean German pilsner profile.
