Instructions

1

Heat 2.5 gallons of water to 155°F and steep the crushed Carapils grain in a mesh bag for 30
minutes. Do not let the water temperature get above 170°F.
2

Remove the grain bag and bring water to a boil.
3

Turn off the heat and stir in the dry malt extract and corn syrup, ensuring it is fully dissolved.
4

Return to a boil and add the 0.5 oz Cluster hops.
5

With 15 minutes remaining, add the Hallertau Mittelfruh hops and clarifier (Irish Moss or Whirlfloc tablet)
6

At flameout, chill the wort as rapidly as possible to 80°F.
7

Transfer to a sanitized fermenter, top up to 5.5 gallons with cold filtered water, and aerate well.
8

Pitch yeast and seal with an airlock.
Notes

Fermentation - Temperature: 50-55°F

Duration: 3 weeks primary, 4 weeks lagering at 35°F.  Perform a diacetyl rest by raising temp to 68°F for the final 3 days of primary fermentation before lagering.
