Honey Kölsch Clone Recipe

A delightful clone inspired by Rogue's Honey Kolsch, featuring a crisp, clean fermentation profile balanced by a subtle sweetness from clover honey. It offers a golden hue and a delicate floral hop aroma that makes it exceptionally refreshing. Consider this an homage to the gone, but not forgotten, Rogue Ales & Spirits.

Brewing Instructions

1

Steep the Cara-Pils grain in 2.5 gallons of 155°F water for 30 minutes. Do not let the water exceed 170°F.

2

Remove grains and bring the water to a boil.
3

Remove from heat and stir in the DME, ensuring it is fully dissolved to prevent scorching.
4

Return to a boil and add the Perle hops for the 60-minute addition
5

Add clarifier (Irish Moss or whirfloc tablet) with 15 minutes remaining.
6

Add the Sterling flavor hops and the honey with 10 minutes remaining in the boil.
7

At flameout, add the final Sterling aroma hops, then rapidly chill the wort to 85°F.
8

Transfer to your sanitized fermenter and top up with cold, filtered water to reach 5.5 gallons.
9

Aerate well and pitch the yeast, seal the fermenter, and store in a cool, dark location.
